This technique was in Steve Raichlen's BBQ USA book under the
title of A New Corn Stick. I followed the same basic recipe but changed it
a bit. The basic idea is to mix up a batch of thick corn bread batter and
bake it on the grill in corn husks.
Start by putting a couple of tablespoons of corn bread batter
into a husk leaf.

Fold it over to encase the batter ...

... then fold it into another leaf ...

... and tie it up like a present to hold it all together.

Cook the corn sticks directly over a hot fire.

After about 5 minutes on each side, they'll be nicely charred.
When they're firm but still spring back, they're done.

Peel off the charred husks (a bit messy) and the result is
a wonderful corn bread with a nice crust.
