Oaxacan Corn Boats


Another great recipe from the Q master Steve Raichlen from his Rib, Ribs, Ribs book (which also has some other really great recipes).  The corn is grill roasted and then chilled.  The husks are saved and made into boats.  The corn is mixed with mayo, ancho chili powder, lime juice, and cilantro and then stuffed into the husk boats and grilled over medium high heat.  Best corn ever.
