Bacon, smoke, and brown sugar. What could be better? Start by tossing a pound of thick cut bacon (buy the good stuff) with a cup of brown sugar and about a quarter of a teaspoon of cayenne pepper in a bowl. Put the bacon on a grill pan to catch the drippings. Heat the grill up to medium (about 350 or so) with some hickory for smoke. Smoke roast the bacon for about half an hour or so. Watch it so the brown sugar doesn't burn. Take it off and let it cool on the rack or on a plate. Don't put paper towels down unless you're trying to add some fiber to it (which would not only wreck the taste, but would look bad too). The bacon will crisp up as it cools. Cut into pieces and enjoy a little bit of heaven, right here on earth. |
