Chicken Bombs


From a plank grilling book by Ted Reader.  The stuffing is made with corn bread, onions, peppers, mozzarella, raisins, and bourbon.  Stuffed into a butterflied and flattened chicken breast ...

... then wrapped with four slices of bacon and put on a plank.

Cooked over medium high heat until the bacon is crisp and the chicken is done.

 

Tasty.  Definitely worth doing again.
