Goat Chops


A friend at work eats goat all the time at their place.  Not a big meat here in the states, but it is in many other countries.  We got to talking and he said he'd bring me some.  He gave me two packages that each said "8 chops" on the outside.  I figured he got a total of eight and that there was one or two in each package.  Wrong.  They're just tiny little chops.  Notice the quarter in the bottom left hand corner.

Hunted around for a good recipe and finally decided on a mixture of sugar, beef stock, soy sauce, sesame oil, garlic, sesame seeds, and red pepper flakes.

   

Let the chops marinade over night and all day the next day.

Heated up the little Kamado to about 375.  It was dark out, it had been raining all day, and it turned from rain to freezing rain to snow throughout my cook but it was worth it.  Tossed them on directly over the coals.

   

Let them go about 4-5 minutes on each side.  They were nicely browned on the outside and doneness varied from medium to medium well.  Wile the meat was sitting, I tossed a little bread and seasoned zucchini to go along with them.

   

I have to say, they were way better than I thought they'd be and the whole family agreed.  Gotta get me some more of that stuff.
