Herbed Beer Meatloaf


There's no better way to make meatloaf than to smoke roast it.  Ok, maybe just a straight smoking would be better, but it's a pretty close match.  This is based off a recipe from Ted Reader's "King of the Q's Blue Plate BBQ" book.

I made it from one pound of ground beef, one pound of ground pork, and one pound of ground buffalo.  It's mixed with herbs, spices, onion, barbecue sauce, and beer.  I used a grill wok to let the smoke through.

Wrapped it in bacon and then rubbed it with "Bone Dust Seasoning" (not included in the picture).

Smoke roasted at 400 degrees with apple, hickory, and sugar maple
