From Steve Raichlen's How To Grill book, these are some of the best pork chops if you're looking for something just a little different. A pocket is cut into super thick chops and then stuffed with fresh basil, pepperoni, smoked ham, and Provolone cheese. The chops are then brushed with olive oil, topped with a sage leaf, and sprinkled with salt and fresh ground pepper. The pocket is sealed shut with toothpicks. All done with grilled sweet potatoes with molasses glaze. |
