What a great way to top a steak. Based on a recipe from Better Homes and Gardens "The New Grilling Cookbook". Start with a couple of large garlic bulbs, some EVOO, and fresh herbs of your choosing. Cut the tops off the garlic bulbs so the cloves are exposed. Pour a little olive oil on top, then add the herbs, and top with a little more oil. Wrap them up in doubled up aluminum foil (leave a little room in there for steam), and toss over a medium grill for 30-45 minutes until done. Towards the end of the cooking time, toss your steaks on. I made a two tiered fire so I had a very hot fire to sear the steaks, and a medium zone to do the garlic. Once the garlic bulbs are fairly soft, take them off the grill. Scrape off the herbs and save them along with any oil that's in the bottom. Squeeze the garlic out and mash it. Spread the garlic over the steak and then drizzle the herb oil on top of that. Add a little more oil to the herbs if needed. |
