This Southwest Smoked Shrimp Caesar salad came from another
one of my favorite cookbooks,
Cooking Fearlessly. It's a cookbook from a restaurant called
Hudson's on the Bend in Austin,
Texas. I ate the best meal of my life at that place and all the recipes
are in this book.

Start by baking some Tabasco croutons.

Brush the shrimp with sour cream and then give them a nice coating of rub.

Toss them in the smoker ...

... until they turn white/pink and are still juicy.

Mix together your dressing ingredients.

Toss the lettuce with the dressing, add the croutons and smoked shrimp and
you're all done.
