Trinidadian Swordfish with Mango Salsa and "Bakes".
From the TV show "Primal Grill with Steve Raichlen". My
wife doesn't like fish, but she loved these (and that's the ongoing challenge).
The "bakes" are fantastic and would be good for all kinds of other sandwiches or
just as a bread.
The bread dough is a little moister than regular bread dough
but you should still be able to roll it. Unfortunately, I couldn't find
our rolling pin so I had to do these by hand (thus the strange shapes).
Brush both sides with a little oil and grill.

The swordfish steaks are marinated for a couple of hours
(peppers, herbs, lime juice, etc.) and grilled for a few minutes on each side.

The mango salsa consists of lime juice, rice vinegar, brown
sugar, mango, red pepper, jalapeno, cucumber, scallions, mint, and cilantro.
It would have had ginger had I remembered to write it on the list.

The whole thing is put together by putting the swordfish on a
"bake", adding some Caribbean hot sauce and the mango salsa.

Fantastic.
